Watercress Soup

Watercress is a super salad leaf, packed with minerals and with a delicious peppery taste. Packed into this soup, it makes a delicious start to your meal. This is a very light starter or snack and really compliments a light work out or if you need something to eat  if you get home quite late from a training session.

Ingredients (Serves 2)

  • 1 packet watercress
  • 1 white potato
  • 1 white onion
  • 500ml chicken stock
  • 1 celery stick
  • Method

  • First, fry off the onion and garlic in olive oil
  • Add the celery stick and cook until softened
  • Finely chop the peeled white potato, and add it in with the chicken stock, and season with salt and pepper
  • Simmer gently for 30 minutes
  • Add the watercress and blend instantly with a hand blender
  • Serve it up with a crusty roll or simply on it's own
