This is a real classic, but we've used lean turkey mince to cut down on the saturated fat, and upping the vegetable content helps keep this main really light. Serve with steamed rice, or a baked sweet potato. The guacamole in our starters section makes the perfect accompaniment. Add any leftovers to your lunchbox or freezer in one portion bags- perfect for emergencies! A real treat after a heavy winters run or training session.
Ingredients (Serves 4 easily)
1 500g pack lean turkey mince
1 red chilli
2 red onions
2 red peppers
1 packet mini Portobello mushrooms
2 cloves garlic
1 can drained red kidney beans
1 can chopped tomatoes
½ tube tomato ketchup
Oregano
Cumin
Worcestershire Sauce
Pinch Sugar
Method
Brown the turkey mince in a non-stick pan and set aside
Finely chop all the vegetables
Fry off the red onions, adding the garlic at the last minute to avoid burning
Add 1 teaspoon cumin
Throw in the peppers and mushrooms and cook until slightly softened
Once browned, add the turkey mince back in along with the kidney beans, tomatoes, tomato puree and oregano
Season with salt and pepper, and add a second teaspoon of cumin, and a good slug of Worcestershire sauce
You can add a pinch of sugar too to balance the flavours
Now simmer for 40mins to 1hour until you are ready to eat
