Lean turkey mince is a fantastic source of protein and these koftas are a great way to use it in a different way. Wholemeal pitta's are great as they are light, full of fibre and easy to keep a stash of in the cupboard. Fantastic as a main meal, you can literally have them on the run or after you've burn lot's of calories training.Â
Ingredients (Serves 4)
1 packet of lean turkey mince
1 red onion finely diced
1 chilli
1 teaspoon cumin
3 crushed garlic cloves
2 teaspoons ground coriander
2 tablespoons fat free natural yoghurt
Handful fresh mint
Lemon juice
Wholemeal pittas and salad leaves to serve
Method
First, finely chop the chilli and red onion, and crush the garlic clove
Add these to a mixing bowl with the turkey mince, season with salt and pepper, and sprinkle over the cumin and coriander
Give everything a good mix, it's best to get stuck in and use your hands
Shape into long thin kebabs, and like up on a baking tray
Cook under a hot grill until cooked right though, turning half way through (15-20mins depending on how thick they are)
Meanwhile, finely chop up your mint, and mix it into the natural yoghurt with a squeeze of lemon juice
