Turkey Koftas

Lean turkey mince is a fantastic source of protein and these koftas are a great way to use it in a different way. Wholemeal pitta's are great as they are light, full of fibre and easy to keep a stash of in the cupboard. Fantastic as a main meal, you can literally have them on the run or after you've burn lot's of calories training. 

Ingredients (Serves 4)

  • 1 packet of lean turkey mince
  • 1 red onion finely diced
  • 1 chilli
  • 1 teaspoon cumin
  • 3 crushed garlic cloves
  • 2 teaspoons ground coriander
  • 2 tablespoons fat free natural yoghurt
  • Handful fresh mint
  • Lemon juice
  • Wholemeal pittas and salad leaves to serve
  • Method

  • First, finely chop the chilli and red onion, and crush the garlic clove
  • Add these to a mixing bowl with the turkey mince, season with salt and pepper, and sprinkle over the cumin and coriander
  • Give everything a good mix, it's best to get stuck in and use your hands
  • Shape into long thin kebabs, and like up on a baking tray
  • Cook under a hot grill until cooked right though, turning half way through (15-20mins depending on how thick they are)
  • Meanwhile, finely chop up your mint, and mix it into the natural yoghurt with a squeeze of lemon juice
  • Serve up with toasted wholemeal pittas, and salad
