Fish is a really fantastic source of protein to fuel your tired muscles and makes a delicious light alternative to meat. Don't be put off as cooking it really is very simple! This is the healthy alternative to a trip down the chippy. Delicious steamed fish with sweet potatoes, full of fibre and vitamins, and a big pile of veg. Perfect for a main meal on Friday or Saturday night after a hard week of training.
Ingredients (Serves 2)
2 white fish fillets (try coley, haddock, etc)
1 lemon
Fresh herbs like parsley or dill
Teaspoon of capers
1 head of broccoli
2 small sweet potatoes
1 cup frozen peas
Baking parchment
Method
First, cut your sweet potatoes into wedge shapes leaving the skin on
Spread out on a baking tin, season and spray with a little olive oil. Place into the oven for 20-30mins
Cut some large squares of baking parchment
Place 2 thin lemon slices in the centre of each, with ½ teaspoon of capers and a few sprigs of fresh herbs
Lay one fish fillet over each, skin facing up
Fold the edges of the baking parchment up and twist round the edge like a Cornish pasty to make a tightly sealed pouch
Place these into the oven too for 15 minutes
Simply steam your broccoli and frozen peas
To serve the fish, open the parcels and check the fish flakes easily (this means it is cooked)
