Trout is cheap and very healthy and a great light main that's quick to make and a nicely balanced meal. The feta cheese adds extra protein too and is a great meal to add to your weekly routine. Fantastic all year round and will help re-fuel your muscles after a big run.
Ingredients (Serves 2)
2 large or 4 small trout fillets
Fresh coriander
4 lemons
1 red chilli
1/3 pack feta cheese
2 sweet potatoes
2 white potatoes
1 head broccoli
1 packet spring greens
Method
Chop up the potatoes, skin on, and put them on to boil in a pan of salted water
Thinly slice the lemons and spread out to cover a baking sheet
Finely chop the chilli and the coriander, and sprinkle 1/3 of each over the flesh side of the trout fillets
Place the trout fillets, skin side facing up, over the lemons
Cook under a hot grill until the skin blisters and the flesh is cooked through
Meanwhile, steam the veg
When the potatoes are cooked, drain and turn out onto a chopping board with the remaining coriander, chilli
Crumbled feta
Chop the potatoes roughly, mixing in the other ingredients, to make a rough mash
