Lentils are a great source of fibre and this is a heartwarming staple to keep in your fridge. You can always serve it with some tandoori chicken on the side and is a real treat to come home to after a running session. This main meal is perfect if you have the mega munchies and need to kill off all those horrible cravings quickly.
Ingredients (Serves 2-4)
300g red lentils
Thumb sized piece of fresh ginger
3 garlic cloves finely chopped
5 fresh tomatoes
Fresh spinach
2 teaspoons ground garam marsala
1 teaspoon cumin seeds
2 teaspoons turmeric
1 teaspoon ground coriander
Method
Wash the lentils in water
Cover with twice as much cold water in a large pan, and put on the hob on a medium heat
Spoon off any foam which will form on top of the water as the lentils come up to a simmer. You may need to add a little extra
water
Add the ginger, cut into fine matchsticks, and the tomatoes, chopped finely
Add the 2 teaspoons of turmeric
In a small frying pan, fry the chopped garlic and cumin seeds gently. When they have started browning off, add the garam masala and ground coriander for a few seconds, then tip into the lentil mix
Simmer for 40-50 minutes until the lentils are completely cooked
At the last minute, add the spinach and heat until it wilts
Serve with toasted wholemeal pitta, steamed rice, or simply on it's own
