Meringues are saintly as long as they are not covered with lashings of whipped cream! This option is very healthy, topped with our favourite 0% fat greek yoghurt and piles of super berries. Fantastic for helping to get rid of lactic acid after a run or a yummy dessert if you fancy a treat.
Ingredients
2 egg whites
60g caster sugar
60g icing sugar
2 tablespoons 0% fat greek yoghurt
Frozen mixed berries, defrosted
Method
Beat the egg whites with an electric mixer until they form stiff peaks
Gradually add first the caster sugar, and then the icing sugar a little at a time until the mixture turns glossy
Spoon out onto a greaseproof paper lined baking sheet
Place in the oven at 100 degrees for around 1 ½ hours depending on your oven
Serve when cooled, topped with greek yoghurt and partly defrosted red berries
