Spicy Bean Tacos

Going vegetarian needn't be boring, or low on protein with these delicious bean tacos.  This dinner is a store cupboard winner so it's very convenient and great when you need a main meal or something quick and nice to eat after a run.

Ingredients (Serves 2)

  • 1 can orlotti beans
  • 1 can cannellini beans
  • 1 tin sweetcorn, drained
  • 1 can tinned tomatoes
  • 1 tablespoon tomato puree
  • 1 teaspoon harissa paste
  • 2 cloves garlic
  • 1 bunch coriander, chopped
  • 1 red onion
  • 1 iceberg lettuce, shredded
  • 4 corn taco shells or soft corn tortillas
  • Method

  • Chop and fry the red onion and garlic
  • Add the drained beans and sweetcorn, along with the tinned tomatoes, tomato puree and harissa paste
  • Simmer for 15 minutes
  • At the last minute, add the chopped coriander
  • Serve in the taco shells on top of the shredded lettuce
  • You could also serve alongside the guacamole from our starters section
