Going vegetarian needn't be boring, or low on protein with these delicious bean tacos. This dinner is a store cupboard winner so it's very convenient and great when you need a main meal or something quick and nice to eat after a run.
Ingredients (Serves 2)
1 can orlotti beans
1 can cannellini beans
1 tin sweetcorn, drained
1 can tinned tomatoes
1 tablespoon tomato puree
1 teaspoon harissa paste
2 cloves garlic
1 bunch coriander, chopped
1 red onion
1 iceberg lettuce, shredded
4 corn taco shells or soft corn tortillas
Method
Chop and fry the red onion and garlic
Add the drained beans and sweetcorn, along with the tinned tomatoes, tomato puree and harissa paste
Simmer for 15 minutes
At the last minute, add the chopped coriander
Serve in the taco shells on top of the shredded lettuce
