Lean protein, packed into a deliciously light tomato casserole that's packed with loads of delicious veggies in a one pot wonder. What's not to love! This fantastic main meal is easy to make and one you can pop in the freezer if you go crazy on the portions. Great all year round and a real treat after a good run.
Ingredients (Serves 4)
4 skinless chicken joints. Use breasts, legs, thighs, it's up to you but discard the skin
1 can chopped tomatoes
½ tube tomato puree
Vegetable stock
1 packet mushrooms
500g carrots, peeled and cut into large chunks
1 cup frozen peas
1 red onion
1 clove garlic
Small new potatoes
Dried mixed herbs
Method
Brown off the onion and add the garlic. Toss in the sliced mushrooms, and carrots
Add in the chicken joints
Once everything is browned, add the tin of tomato, potatoes, tomato puree, and a can full of vegetable stock
Add the frozen peas and herbs
Simmer over a low heat for 40 minutes until the potatoes are cooked through
Serve with some freshly steamed veg on the side in a big bowl
