Chicken or turkey breasts are a great source of lean protein and this healthy salad is easy to make, delicious and a fantastic main meal. Perfect on a busy work schedule when you don't have time to spend in the kitchen and want something nice to fuel your body with for a run.
Ingredients (Serves 2)
2 skinless chicken breasts or turkey breast fillets
2 teaspoons of paprika
2 teaspoons dried tarragon
Lemon Juice
1 round lettuce
Cucumber
2 cooked beetroots
10 olives
Spring onions
1 ripe avocado
Method
Mix the paprika and tarragon together on a plate
Flatten the chicken breasts by beating with a rolling pin to help them cook faster
Press them into the spice mix to get a good coating- add more spices if needed
Place under a hot grill until cooked through, turning once
Prepare the salad, chopping the spring onions, avocado and beetroot and mixing with the lettuce
