Summer Pudding

Another dessert berry bonanza packed with antioxidants and fibre, yes there is a little bread but it's still fat free and will help re-fuel your body with lots of vitamins and minerals after that run.

Ingredients

  • 1kg mixed berries, fresh or frozen
  • 200g fresh strawberries
  • 2/3 pint water
  • 180g caster sugar
  • 10 thin slices of white bread
  • Method

  • Place the berries, sugar and water into a pan and slowly bring up to a gentle simmer for 5 minutes. Check for taste here, and add more sugar if needed.
  • Slice the fresh strawberries into chunks and add these to the other berries once you have taken them off the heat.
  • Drain the fruits in a sieve over a large bowl to collect the juice
  • Remove the crusts from the bread and dip into the juice one slice at a time, lining a large basin as you go. Keep enough slices dipped in juice to form a lid.
  • Once all the sides are lined, tip in the fruit and pour in any remaining juice
  • Place the remaining slices over to form a lid
  • Place a plate over the top, and put a few tins or weights on top of this
  • Put the whole thing on another plate to catch any drips and chill in the fridge for several hours, or overnight
  • To serve, turn the pudding out onto a plate, easing the side up with a knife if it is stuck.
