Beetroot and watercress are both packed with antioxidants & Vitamins, as well as tasting delicious. Add omega-3 rich hot smoked mackerel and you have a little gem for a starter! Fantastic for lunch or dinner and will really satisfy a real hunger, especially good after a long run or cardio session.
Ingredients (Serves 2)
- 2 hot smoked trout fillets
- 4 cooked beetroots (vacuum packed, not in vinegar)
- ½ packet watercress
- 1-2 teaspoons hot horseradish
- 1 lemon juice
- ½ teaspoon grainy mustard
- 2 teaspoons olive oil
Method
- Flake the mackerel fillets
- Chop the beetroots into chunks
- Place the watercress, beetroot, and mackerel flakes into a bowl
- In a separate dish, mix up the horseradish, mustard, lemon juice and olive oil, seasoning with salt and pepper
- Dress the salad and mix it all up well
- Serve and enjoy
