Greek Salad

A ‘no cook' starter, perfect for quick assembly from the fridge or on a hot summer's evening. Full of vitamins and minerals, as well as protein in the cheese, make sure you go light on dressing to keep the calorie content down. This is a real summer time training treat, great an hour before or after a run. 

Ingredients (Serves 2)

  • 1/3 cucumber
  • 1 small red onion, sliced finely
  • 2 Large ripe tomatoes or a handful of cherry tomatoes
  • Small amount of feta cheese diced
  • 10 kalamata or black olives, pitted
  • Pinch dried oregano
  • Olive oil
  • White wine vinegar
  • Method

  • Slice the tomatoes into chunks
  • Half the cucumber lengthways, scoop out the pips and discard. Cut into slices
  • Finely slice the red onion into half moons
  • Toss everything into a bowl, crumble over the feta and sprinkle over the oregano
  • Drizzle over a small amount of olive oil (around a teaspoon) and around a teaspoon of white wine vinegar
  • Season with pepper and enjoy!
