A ‘no cook' starter, perfect for quick assembly from the fridge or on a hot summer's evening. Full of vitamins and minerals, as well as protein in the cheese, make sure you go light on dressing to keep the calorie content down. This is a real summer time training treat, great an hour before or after a run.Â
Ingredients (Serves 2)
1/3 cucumber
1 small red onion, sliced finely
2 Large ripe tomatoes or a handful of cherry tomatoes
Small amount of feta cheese diced
10 kalamata or black olives, pitted
Pinch dried oregano
Olive oil
White wine vinegar
Method
Slice the tomatoes into chunks
Half the cucumber lengthways, scoop out the pips and discard. Cut into slices
Finely slice the red onion into half moons
Toss everything into a bowl, crumble over the feta and sprinkle over the oregano
Drizzle over a small amount of olive oil (around a teaspoon) and around a teaspoon of white wine vinegar
