Chilli Salt and Pepper Squid with Rocket

Fresh squid is cheap, healthy and delicious and a great healthy starter. Cook it quickly to avoid a rubbery texture and ask your fishmonger or fish counter to prepare the squid for you if it is not already done. This will save you time if you are on a busy schedule and need to squeeze in a training session. 

Ingredients (Serves 2)

  • 2 small or 1 large squid
  • 1 red or green chilli
  • Rocket leaves
  • Salt and pepper
  • 1 desert spoon full of plain flour
  • Splash of olive oil
  • Lemon wedges to serve
  • Method

  • Slice the squid into rings or strips. You can score the flesh if you like
  • Finely chop the chilli (use more or less depending on how hot you like it)
  • Season the flour, add the chilli, and mix well
  • Toss the squid in the flour mix
  • Heat a pan with the oil in until very hot
  • Toss in the squid: it will only take a few minutes to cook. As soon as it has curled up and turned opaque, it is done!
  • Serve it straight away on a bed of rocket with the lemon wedges
