Fresh squid is cheap, healthy and delicious and a great healthy starter. Cook it quickly to avoid a rubbery texture and ask your fishmonger or fish counter to prepare the squid for you if it is not already done. This will save you time if you are on a busy schedule and need to squeeze in a training session.Â
Ingredients (Serves 2)
2 small or 1 large squid
1 red or green chilli
Rocket leaves
Salt and pepper
1 desert spoon full of plain flour
Splash of olive oil
Lemon wedges to serve
Method
Slice the squid into rings or strips. You can score the flesh if you like
Finely chop the chilli (use more or less depending on how hot you like it)
Season the flour, add the chilli, and mix well
Toss the squid in the flour mix
Heat a pan with the oil in until very hot
Toss in the squid: it will only take a few minutes to cook. As soon as it has curled up and turned opaque, it is done!
Serve it straight away on a bed of rocket with the lemon wedges
