Paprika and Tarragon Grilled Chicken Salad

Chicken or turkey breasts are a great source of lean protein and this healthy salad is easy to make, delicious and a fantastic main meal. Perfect on a busy work schedule when you don't have time to spend in the kitchen and want something nice to fuel your body with for a run.

Ingredients (Serves 2)

  • 2 skinless chicken breasts or turkey breast fillets
  • 2 teaspoons of paprika
  • 2 teaspoons dried tarragon
  • Lemon Juice
  • 1 round lettuce
  • Cucumber
  • 2 cooked beetroots
  • 10 olives
  • Spring onions
  • 1 ripe avocado
  • Method

  • Mix the paprika and tarragon together on a plate
  • Flatten the chicken breasts by beating with a rolling pin to help them cook faster
  • Press them into the spice mix to get a good coating- add more spices if needed
  • Place under a hot grill until cooked through, turning once
  • Prepare the salad, chopping the spring onions, avocado and beetroot and mixing with the lettuce
  • Add the olives. Squeeze over the lemon juice
  • Serve it all up and enjoy!
