Mixed Mini Bruschettas

A simple Italian classic doesn't have to spell diet disaster and is a great starter. Pile up the veggies to pack in the vitamins and help you towards your five a day. This is ideal when you feel you may need something slightly more substantial as a starter or if you are going light on carbs for the main course. Great to have before a big training session or run to give you that extra bit of fuel you'll need.

Ingredients (Serves 2)

  • 1 small baguette
  • Broad Bean Topping
  • Fresh blanched broad beans
  • Mint
  • Spring onions
  • Lemon Juice
  • Classic tomato topping
  • 1 clove garlic
  • 2 medium ripe tomatoes
  • Basil
  • Drizzle olive oil and balsamic vinegar
  • Method

  • First, cut the baguette into four ½ inch thick slices diagonally for a large surface area and lightly toast
  • For the broad bean topping, simply de-skin the broad beans, and mix with finely chopped mint, sliced spring onions and lemon juice and pile onto two of the toasted baguette slices
  • For the classic topping, rub the garlic clove over each of the remaining toast slices, it will ‘grate' into the bread. Slice one of the tomatoes in half, and rub one half into the bread
  • Finely dice the remaining 1 ½ tomatoes, and mix with the olive oil and balsamic vinegar. Pile onto the baguette slices and tear over some basil leaves
  • Season everything with salt and pepper and enjoy!
