Stir frys are a great way to eat a plateful of veg, and you needn't add loads of fat to get lots of flavour. This dish will take you less than 10 minutes to prep and cook and is fantastic main meal when you want something quick, nutritious and yummy after a training run.
Ingredients (Serves 2)
1 pack stir fry mix of your choice. Look for one with lots of different coloured vegetables
Spring onions
Fresh ginger - thumb sized piece
1 clove garlic
Soy sauce
Fish sauce
1 packet raw king prawns, fresh or frozen
1 green chilli and fresh coriander to garnish
Angel hair noodles (available from Asian food stores and some supermarkets)
Method
First, lightly fry the spring onions, thickly sliced, with the garlic and ginger, grated
Add the king prawns and a splash of soy and fish sauce. Cook until almost pink
Now add the veg for the last few minutes
Ensure that the prawns are completely pink
Rehydrate the angel hair noodles by soaking in boiling water
Drain, and add to the stir fry for the last few seconds to mix
Garnish with slices of green chilli and fresh coriander
