Mixed Berry Jelly

Forget the sugary cubes in a packet, this real jelly is so easy to make and tastes simply delicious. Plus it is packed with antioxidants, and completely fat free so you can enjoy it any time. Great for a real energy boost before a run and an even better dessert for anyone who has a sweet tooth.

Ingredients

  • 500g fresh or frozen soft berries. Use whichever you like, red or blackcurrants, strawberries, blackberries, raspberries, etc
  • 125g caster sugar
  • 1 lemon juice
  • 4-5  sheets of fine gelatine
  • Method

  • First of all, put all the berries into a pan with the sugar and lemon juice, and around half a litre of water
  • Gently heat until the mixture begins to bubble, and the fruits have started breaking down. Stir the fruit to encourage it to disintegrate
  • Push the fruit mixture through a sieve using a wooden spoon to remove all pips and stalks, making sure to extract all of the juices
  • Soak the gelatine leaves according to the packet instructions, until they are soft
  • Return the juice to the heat and bring up to a gentle simmer
  • Squeeze out the gelatine leaves and then add to the juice mixture, stirring until completely dissolved
  • Pour into individual glasses or pots to serve it in, and chill overnight in the fridge before serving
