Meringues with Red Berries

Meringues are saintly as long as they are not covered with lashings of whipped cream! This option is very healthy, topped with our favourite 0% fat greek yoghurt and piles of super berries. Fantastic for helping to get rid of lactic acid after a run or a yummy dessert if you fancy a treat.

Ingredients

  • 2 egg whites
  • 60g caster sugar
  • 60g icing sugar
  • 2 tablespoons 0% fat greek yoghurt
  • Frozen mixed berries, defrosted
  • Method

  • Beat the egg whites with an electric mixer until they form stiff peaks
  • Gradually add first the caster sugar, and then the icing sugar a little at a time until the mixture turns glossy
  • Spoon out onto a greaseproof paper lined baking sheet
  • Place in the oven at 100 degrees for around 1 ½ hours depending on your oven
  • Serve when cooled, topped with greek yoghurt and partly defrosted red berries
